Vegan Pancakes
Cooking Time 25-30 mins
Ingredients
1 cup flour
2 tbs organic powder sugar
1 tbs baking powder
½ tsp salt
1 cup rice milk
1 tbs apple cider vinegar
2 tsp vanilla extract or paste
2 tbs avocado oil or non-stick spray
Equipment Needed
- Medium bowl
- Small bowl
- Griddle or sauté pan
Preparation Instructions
- Step 1: In a medium bowl, add the flour, sugar, baking powder and salt. Stir to combine
- Step 2: In a separate small bowl or liquid measuring cup, add rice milk, apple cider vinegar and vanilla. Stir to combine and set aside for 10 minutes
- Step 3: Pour the liquid mixture into the dry ingredients and whisk together until completely combined and there are no lumps. Set aside and let batter rest for 5 minutes
- Step 4: Place griddle or sauté pan on moderate high heat. Add enough oil to coat the bottom
- Step 5: Pour little round circles of the batter onto the griddle or pan. Be sure to allow room in between each pancake
- Step 6: Once small bubbles form on the surface of your pancake, flip and cook the other side until golden brown.
- Repeat steps 5 and 6 until batter is gone
