Double Chocolate Chip Cookies – Dr. Akua | Expert Nutrition Advice You Can Trust

Double Chocolate Chip Cookies

Prep and Cook Time: 30 minutes

Ingredients

  • ½ cup vegan butter (Earth Balance)
  • ½ cup white sugar
  • ¾ cup brown sugar
  • 1 tbs vanilla extract
  • 1 cup self-rising Flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbs soy milk or any non-dairy milk
  • 4 oz vegan dark chocolate + more for topping (chopped into small chunks)

Equipment Needed

  • Electric mixer
  • Sifter
  • Mixing bowl
  • Cookie sheet

 

Preparation Instructions

  • Step 1: Preheat the oven to 350°F
  • Step 2: Add the vegan butter and brown and white sugars to an electric mixing bowl and cream together
  • Step 3: Mix in the vanilla extract
  • Step 4: Sift the flour and cocoa powder into a mixing bowl
  • Step 5: Mix in the baking powder and salt
  • Step 6: Add the dry ingredients to the wet ingredients, mixing in by hand until crumbly
  • Step 7: Add 1 tbs of soy milk. Mix into a thick cookie dough
  • Step 8: Add the chocolate chunks and mix in by hand. Your cookie dough will be very thick, but sticky enough to easily roll into balls
  • Step 9: Roll into small balls and space evenly on a parchment lined baking tray
  • Step 10: Bake for 10 minutes. The edges will be firm, but the cookies will still be soft in the middle. The cookies will firm up as they cool
  • Step 11: Press in a few more chocolate chunks to the top of the cookies as they come out of the oven (optional)
