Chimichurri Green Bowl – Dr. Akua | Expert Nutrition Advice You Can Trust

Chimichurri Green Bowl

Prep and Cook Time: 20 minutes

Ingredients

  • 3 cups edamame (shelled)
  • 1 cup chickpea
  • 1 tsp red pepper flakes
  • ½ avocado (medium diced)
  • 1 tbs scallions (small cut)
  • 2 tsp miso
  • ½ cup extra virgin olive
  • ½ cup arugula (packed tight)
  • ¼ spinach (packed tight)
  • 2 tbs vinegar
  • 4 cloves garlic minced
  • 2 small chiles
  • 1 tsp salt

 

Equipment Needed

  • Mixing bowl
  • Food processor or blender

Preparation Instructions

  • Step 1: Combine edamame, chickpeas, red pepper flakes, avocado, scallions and miso in a bowl. Set aside
  • Step 2: Place oil, arugula, spinach, vinegar, garlic, chiles and salt into a blender or food processor. Mix thoroughly
  • Step 3: In a medium to large bowl, toss all ingredients together until well coated. Serve
