Chimichurri Green Bowl
Prep and Cook Time: 20 minutes
Ingredients
- 3 cups edamame (shelled)
- 1 cup chickpea
- 1 tsp red pepper flakes
- ½ avocado (medium diced)
- 1 tbs scallions (small cut)
- 2 tsp miso
- ½ cup extra virgin olive
- ½ cup arugula (packed tight)
- ¼ spinach (packed tight)
- 2 tbs vinegar
- 4 cloves garlic minced
- 2 small chiles
- 1 tsp salt
Equipment Needed
- Mixing bowl
- Food processor or blender
Preparation Instructions
- Step 1: Combine edamame, chickpeas, red pepper flakes, avocado, scallions and miso in a bowl. Set aside
- Step 2: Place oil, arugula, spinach, vinegar, garlic, chiles and salt into a blender or food processor. Mix thoroughly
- Step 3: In a medium to large bowl, toss all ingredients together until well coated. Serve
