Blackberry Cobbler – Dr. Akua | Expert Nutrition Advice You Can Trust

Blackberry Cobbler

Prep and Cook Time: 1 hour

Ingredients

  • ½ cup vegan butter (earth balance), softened
  • 2 cups granulated sugar
  • 2 tsp vanilla paste
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup self-rise flour
  • 2 ½ cups blackberries (fresh or frozen)
  • ½ cup date paste
  • 1 tsp lemon juice
  • 2 tbs flaxseed meal
  • Vegan vanilla ice cream

 

Equipment Needed

  • Medium or large mixing bowl
  • 9-in baking dish

Preparation Instructions

Topping:

  • Step 1: Place butter in a medium to large bowl. Add sugar, vanilla, cinnamon and ¼ tsp salt. Mix together
  • Step 2: Add flour and, using your fingers, start mixing the flour into the rest of the ingredients. You should have a dry, sandy like consistency
  • Step 3: Set aside and prepare the filling

 

Filling:

  • Step 1: Preheat oven to 350°F and grease 9” baking dish
  • Step 2: Place blackberries in a bowl and mix together date paste, sugar, lemon juice, flaxseed and ¼ tsp salt
  • Step 3: Pour the mixture into your baking dish
  • Step 4: Place topping evenly over the blackberries, covering completely
  • Step 5: Bake for 30 minutes. If the edges are golden brown and berries are bubbly, it is ready. If you prefer a crispier cobbler, bake an additional 5-10 minutes
  • Step 6: Slice and serve warm with vegan vanilla ice cream
