Apple Cake – Dr. Akua | Expert Nutrition Advice You Can Trust

Apple Cake

Prep and Cooking Time: 1 hour

Ingredients

  • 2 ½ cups self-rising flour
  • 1 ½ cups brown sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ cup fig paste
  • 1 cup vegan butter (earth balance)
  • ¼ cup soy or non-dairy milk w/ 2 tsp fresh lemon juice
  • 1/3 cup avocado oil
  • 2 tbs applesauce
  • 1 tbs vanilla extract
  • 1 ½ Gala or Fuji apples and Granny Smith chopped
  • 1/3 cup walnuts (roughly chopped) optional

Equipment Needed

  • Large mixing bowl
  • 13×9 baking dish

Preparation Instructions

  • Step 1: Preheat oven to 350°F
  • Step 2: In a large bowl, mix flour, brown sugar, baking powder, salt, cinnamon and nutmeg
  • Step 3: Add in fig paste and vegan butter. Mix together
  • Step 4: Add non-dairy milk mixture, oil, applesauce and vanilla extract. Mix together well
  • Step 5: Fold in apples and walnuts
  • Step 6: Transfer to a greased 13×9-in. baking dish and place in the oven. Bake for 35-45 minutes (or until a toothpick inserted in the center comes out clean)
  • Step 7: Cool on a wire rack. Serve with whipped topping
