Apple Cake
Prep and Cooking Time: 1 hour
Ingredients
- 2 ½ cups self-rising flour
- 1 ½ cups brown sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- 2 tsp ground cinnamon
- ¼ tsp nutmeg
- ½ cup fig paste
- 1 cup vegan butter (earth balance)
- ¼ cup soy or non-dairy milk w/ 2 tsp fresh lemon juice
- 1/3 cup avocado oil
- 2 tbs applesauce
- 1 tbs vanilla extract
- 1 ½ Gala or Fuji apples and Granny Smith chopped
- 1/3 cup walnuts (roughly chopped) optional
Equipment Needed
- Large mixing bowl
- 13×9 baking dish
Preparation Instructions
- Step 1: Preheat oven to 350°F
- Step 2: In a large bowl, mix flour, brown sugar, baking powder, salt, cinnamon and nutmeg
- Step 3: Add in fig paste and vegan butter. Mix together
- Step 4: Add non-dairy milk mixture, oil, applesauce and vanilla extract. Mix together well
- Step 5: Fold in apples and walnuts
- Step 6: Transfer to a greased 13×9-in. baking dish and place in the oven. Bake for 35-45 minutes (or until a toothpick inserted in the center comes out clean)
- Step 7: Cool on a wire rack. Serve with whipped topping
