Pistachio Coconut Ice Cream
Prep and Cook Time: 45 minutes
Ingredients
- 2 ½ cup coconut milk
- ¾ cup shelled pistachios unsalted
- ¼ cup date paste plus more to taste
- 1 tbs almond extract
- 1 tbs vodka (this prevents freezing too hard and ice crystals)
- Pinch of salt
- Chopped pistachios for garnish
Equipment Needed
- Blender
- Ice cream maker (optional)
- Silicone ice cube tray
Preparation Instructions
- Step 1: Combine coconut milk and pistachios in a blender on high speed until smooth and creamy
- Step 2: Add date paste, almond extract, salt and vodka. Blend for an additional minute
- Add more date paste if you would like sweeter
- Step 3: Pour mixture into ice cream maker and turn for 20 to 30 minutes
- If you do not have an ice cream maker, use a blender
- Step 4: Pour into a silicone ice cube tray and freeze
