Double Chocolate Chip Cookies
Prep and Cook Time: 30 minutes
Ingredients
- ½ cup vegan butter (Earth Balance)
- ½ cup white sugar
- ¾ cup brown sugar
- 1 tbs vanilla extract
- 1 cup self-rising Flour
- ½ cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbs soy milk or any non-dairy milk
- 4 oz vegan dark chocolate + more for topping (chopped into small chunks)
Equipment Needed
- Electric mixer
- Sifter
- Mixing bowl
- Cookie sheet
Preparation Instructions
- Step 1: Preheat the oven to 350°F
- Step 2: Add the vegan butter and brown and white sugars to an electric mixing bowl and cream together
- Step 3: Mix in the vanilla extract
- Step 4: Sift the flour and cocoa powder into a mixing bowl
- Step 5: Mix in the baking powder and salt
- Step 6: Add the dry ingredients to the wet ingredients, mixing in by hand until crumbly
- Step 7: Add 1 tbs of soy milk. Mix into a thick cookie dough
- Step 8: Add the chocolate chunks and mix in by hand. Your cookie dough will be very thick, but sticky enough to easily roll into balls
- Step 9: Roll into small balls and space evenly on a parchment lined baking tray
- Step 10: Bake for 10 minutes. The edges will be firm, but the cookies will still be soft in the middle. The cookies will firm up as they cool
- Step 11: Press in a few more chocolate chunks to the top of the cookies as they come out of the oven (optional)
