Blackberry Cobbler
Prep and Cook Time: 1 hour
Ingredients
- ½ cup vegan butter (earth balance), softened
- 2 cups granulated sugar
- 2 tsp vanilla paste
- 1 tsp cinnamon
- ½ tsp baking powder
- ½ tsp salt
- 1 cup self-rise flour
- 2 ½ cups blackberries (fresh or frozen)
- ½ cup date paste
- 1 tsp lemon juice
- 2 tbs flaxseed meal
- Vegan vanilla ice cream
Equipment Needed
- Medium or large mixing bowl
- 9-in baking dish
Preparation Instructions
Topping:
- Step 1: Place butter in a medium to large bowl. Add sugar, vanilla, cinnamon and ¼ tsp salt. Mix together
- Step 2: Add flour and, using your fingers, start mixing the flour into the rest of the ingredients. You should have a dry, sandy like consistency
- Step 3: Set aside and prepare the filling
Filling:
- Step 1: Preheat oven to 350°F and grease 9” baking dish
- Step 2: Place blackberries in a bowl and mix together date paste, sugar, lemon juice, flaxseed and ¼ tsp salt
- Step 3: Pour the mixture into your baking dish
- Step 4: Place topping evenly over the blackberries, covering completely
- Step 5: Bake for 30 minutes. If the edges are golden brown and berries are bubbly, it is ready. If you prefer a crispier cobbler, bake an additional 5-10 minutes
- Step 6: Slice and serve warm with vegan vanilla ice cream
